Green Star Eggs on SALE!

In honor of Sarah and all her hard work at Green Star Farm, in honor of peak egg production, in honor of Spring and the upcoming Easter holiday :: Green Star Eggs will be on sale through next week! Go and get 'em, $7.95 a dozen!

Address is actually 1720 Cooper Road, down a longer dirt road on the south side of Cooper Road, turn down, drive past Sonoma County Herb Exchange, and park under the solar array. We'll have a sandwich board sign up where you should turn. Our employee on site will retrieve your FEED Bin for you from the walk in.

Nothin but egg news this week! We're sharing a recipe from loyal FEED Bin subscriber Sheri. Frittata is incredibly versatile and can handle just about any veggies you have on hand, but the recipe below is a great place to start.

Sheri's Frittata

Ingredients:
- 2 Yukon gold potatoes
- Onion
- Chopped braising greens (chard or kale or mustard or the like)
- Peppers
- Fresh herbs (thyme or rosemary or tarragon or any combo of fresh herbs)
- Cooked meat (of your choosing, optional)
- Grated hard cheese (of your choosing, also optional)
- 8 eggs
- Fresh greens (arugula or spring mix or the like)

Directions:
Preheat oven to 350. Thinly slice potatoes and onion, season with salt and pepper. Heat olive oil in an oven safe skillet and cook potatoes and onions until slightly browned. Sprinkle chopped greens, peppers, fresh herbs, pieces of cooked meat, cheese - whatever - over top of potatoes. Whisk and season 8 eggs, pour over everything and give the pan a little jiggle. Place the pan, covered, in the oven for about 10 minutes. Once the frittata is fairly firm remove the lid, sprinkle with grated cheese and place under broiler til slightly browned. Remove from oven, finish with fresh arugula, a drizzle of olive oil and a bit of sea salt and eat!
