Got Artichokes in Your Bin? Don’t Be Intimidated!

I learned how to eat an artichoke early on. I loved scraping the soft meat off the leaves with my teeth, cleaning the choke out of the tender heart and dipping that prized bit in lemon butter. The artichoke plant grows as a large, perennial thistle. The edible part is actually the bud of the thistle, which eventually turns to an exquisitley beautiful flower. Rich in fiber, antioxidants and other nutrients, artichokes are pretty damn good for you, too. Prepping and eating is easier than you think, so give it a shot!
