Veggie Bowl

If you have a hard time finishing up all of your yummy veggies from your box, this recipe is for you! I love getting new veggies every week but wanted to make a recipe that uses my old veggies and is a balanced meal all in one! This recipe is just a guide and can ( and should) be adapted to what veggies you have or what you want to add. I would suggest adding things like an egg, tofu, or some meat if you want to make it more hearty. - Grace Wathen

INGREDIENTS

  • 2 cups of rice ( or grain of choice)

  • 1 can of chickpeas

  • Shallots or onion

  • Garlic

  • Peppers

  • Cherry tomatoes

  • Whatever extra veggies you have. ( broccoli, eggplant, etc)

  • Seasoning ( Garlic powder, salt paprika, or whatever flavor profile you prefer)

  • Splash of chicken or veggie stock

Directions:

Step 1

Measure out 2 cups of rice or desired amount. Cover with water and add a splash of chicken stock or veggie stock. I also like to add chicken bouillon. Put on low and cook covered.

Step 2

Chop your onions and veggies to the desired size.

Step 3

Carmelize onions and add garlic. Add in the rest of your veggies and cook until tender.

Step 4

Add some oil to a pan and let it get hot. Throw in your washed can of chickpeas. Start to let the chickpeas brown and add your seasoning.

Step 5

Combine the veggies and chickpeas together and then place them on a bed of rice or grain of your choosing. Enjoy!

Note- Add an egg or whatever other routine you like if you want a hearty meal.
