Super Lazy Veggie Dinner

Sometimes you are just too tired to cook a big meal. You want to eat veggies but you don’t have the energy or don’t want a huge mess. As someone who is busy myself, I came up with this easy dinner that can be thrown together super quickly. It is filling and a great way to get veggies in on a lazy day. It would also be great for kids because they won’t even know they are eating veggies. - Grace Wathen

INGREDIENTS

  • 1 box Rice-A Roni

  • 1/2 white onion

  • 1 clove garlic

  • 1 carrot

  • 2 stalks Kale

Note - Add in whatever other veggies you have on hand. If you want more protein add chickpeas or meat to the dish.

Directions:

Step 1

Chop up your veggies, and saute them in a large pan. Make sure the onions and carrots start to cook down and become soft.

Step 2

Add the Rice-A-Roni and prepare via the box instructions.

Enjoy your super simple dinner!
