Simple Microgreen Salad

Microgreens are so full of fun and flavor but often it is hard to think of what to do with them. I love making them into a quick salad. You can often add lots of yummy veggies from your box into this salad and it is open to interpretation. This is a perfect recipe if you only have 10 minutes to throw together a yummy nourishing lunch. - Grace Wathen

INGREDIENTS

Ingredients

  • Microgreens

  • Red Rosaine little gem lettuce

  • Chojuro Pear

  • Cherry tomatoes

  • Walnuts

    Note - You can add or substitute more veggies or fillers you like. I love fresh goat cheese added to this salad.

Honey Dijon Vinaigrette

  • 1/4 cup olive oil

  • 1 tablespoon dijon

  • 2 tablespoons honey

  • 1 teaspoon apple cider vinegar

  • Salt and pepper to taste

Directions:

  1. Chop desired amount of lettuce and add microgreens

  2. Thinly slice your pear

  3. Cut cherry tomatoes in half

  4. Add the tomatoes, pear and walnuts to the salad.

Vinagret

  1. Mesure out 1/4 cup olive oil

  2. Add dijon, honey, apple cider vinegar and mix them together

  3. salt and pepper to taste.

Dress your salad and enjoy!
