“PB&J” Strawberry Popsicles

INGREDIENTS

  • 2 cups full-fat coconut milk 1 can

  • ½ cup peanut butter

  • ½ cup strawberries

  • 1 tablespoon maple syrup

Directions:

  1. Put the entire can of coconut milk in a blender and blend it until smooth

  2. Remove about half of the blended coconut milk from the blender

  3. Add the peanut butter and maple syrup into the blender with the remaining coconut milk. Blend until smooth.

  4. Remove the peanut butter, maple, coconut mixture from the blender. Keep separate from the rest of the coconut milk.

  5. Rinse the blender and coarsely blend the strawberries, the strawberry mash should have chunks in it. You could also chop them up very small with a knife if your blender is too powerful.

  6. Fill the popsicle molds to half with the plain coconut milk. Add one tablespoon of strawberry and stir a little.

  7. Fill the popsicle mold to the top with the peanut butter coconut milk mixture

  8. Stick the popsicle sticks/handles into the popsicles and freeze overnight.
