Fennel and Kale Salad
Directions:
Step 1: In a large bowl add the kale leaves and tear them to smaller pieces with your hands. Drizzle with the olive oil and massage until soft.
Step 2: Add fennel and mandarin pieces and season with salt and pepper.
Step 3: Top with slivered almonds and cherries (optional). Toss to combine.
Serve with homemade croutons and your favorite dressing.
